Preparation of Almond Milk

The best way is to blend the Tomarchio half-kilo stick of almond paste in a liter and a half of water. A little secret is to add an infused cinnamon stick to obtain a more intense and decisive aroma, as per Sicilian tradition. Almond milk can be kept in the fridge for three days but remember to shake well before serving.

Preparation of Almond Granita

Blend 500 grams of almond paste with 1 liter of water at room temperature. Work it with an ice cream machine. Alternatively, pour the mixture into a container, place in the freezer and turn it with a spoon from time to time, making sure that it does not solidify as a whole. Consume within two / three days.
